That passion, combined with the knowledge that Tasmania creates sparkling wines of detail and precision, led her to establish Bellebonne with the sole focus of creating Australia’s best sparkling. Her wines are framed around beautiful fruit first, building complexity and depth to support that. Wellington & Wolfe is dedicated to crafting the finest Riesling from Tasmania. Hugh is captivated by Tasmania’s natural beauty, flavourful Rieslings, and strong sense of community. His wines explore both dry and off-dry, textural styles of Riesling, balancing fresh Tasmanian acidity with the island’s unique floral aromas.
