Description
Evenfall Cabernet Sauvignon is estate grown at our home in the West Tamar Valley. It was hand picked and destemmed to open top stainless steel vessels for fermentation. Hand plunged and pumped over as required during ferment, followed by gentle pressing off skins to tank for malolactic fermentation, with careful maturation in oak for 14 months to follow. The bones of this wine lie in the ground of the vineyard that surrounds us and is a relic of some of Tasmania’s first Cabernet Sauvignon plantings. With such a resource, the discipline of making has really been about letting the fruit tell its own truth – from fresh cassis and blackberry, through to firmer, damson stone fruit and earthy tones of rich tobacco and damp earth. This is not a wine in a hurry and will match any fuller-flavoured and more firmly-textured dishes like beef or game.
